RECIPE – Lucky Charms Marshmallow Bars

AKA “Rice Krispy Treats” that get fancied up for St. Patrick’s Day!

Ok so the year is 2021, do we realllllllly need a recipe for these?? Well yes, yes you do, because unless you’re some kind of rock-star parent who makes these treats on the regular, you haven’t memorized the box of Rice Krispies…and since we aren’t using that cereal in these bars, you won’t necessarily have it handy, and shockingly, it’s not printed on Lucky Charms boxes. I know, how are you supposed be “extra” with your marshmallow cereal bars if they won’t tell you how to make it?? Well, here I am, telling you how to make it, you’re welcome.

INGREDIENTS

  • 1 “family size” box of Lucky Charms cereal, 19.3 oz (I used the original, but go crazy!)
  • 5 tbs butter (softened will make it easier, but it’s not necessary)
  • 1-10 oz pack of marshmallows
  • 1-10 oz pack of mini marshmallows
  • green food dye (optional)
Heart, Stars, Horshoes….call it what you want, it’s a ton of MARSHMALLOWS!

Instructions

  1. Spray a 12×9 baking tray with Pam (I buy these disposable ones so I can toss when I’m done)
  2. In a large pot or saucepan, melt the butter over low heat until completely liquid.
  3. Add 10 oz pack of large marshmallows and half of the mini marshmallows (reserve the other half of minis). Stir until completely melted and everything is a gooey mess.
  4. If using the optional green food dye, add 2-3 drops and combine.
  5. Pour Lucky Charms cereal into the post with the melted butter and marshmallows and combine til all the cereal is coated. Then add the remaining mini marshmallows (they will keep their form along with the marshmallows from the cereal and it just elevates these bars a little bit!).
  6. Scoop into your coated baking tray and press into place. (TIP-spray some plastic wrap with Pam and use the plastic wrap to spread the mixture evenly) Then cover and let cool before cutting.
  7. Yes, they can be wrapped for several days but taste best when eaten the same day they are made!
