‘Tis a fine day for the wearing of the green!
And an even finer day to be cooking up a storm of Irish favorites, traditional or more modern, so I’ve put together a single post where all my favorite Holiday treats can be found in one place!

Up first, the go-to, Crock Pot Corned Beef and Veggies. This staple of Irish and American culture comes out at least once a year, but I say make it a year round yummy!

Next we move onto another favorite of mine, Shepherd’s Pot Pie, which combines the crust of a pot pie with the mashed potato topping of a more classic Shepherds (or Cottage) Pie. Feel free to make with ground beef or lamb…and if you’re feeling crazy, use cubed (stew) beef or lamb! Either way this is a meal that won’t have many leftovers, if any at all!

Up next, I share my Oktoberfest post, and you might say, WTF, wrong holiday! Ok wrong holiday, wrong country, wrong everything….except, who says you can’t enjoy an Easy Hot Reuben Dip on St. Patrick’s Day? Heck, instead of using deli meat corned beef, why not use some of your leftover Crock corned beef?? You’re welcome!

And finally, dessert. Lucky Charms Marshmallow Bars are the perfect end of the rainbow for your St. Patrick’s Day parties or even just for a sweet treat at the end of the day. Don’t love the denseness of Lucky Charms? No worries, you can of course use traditional Rice Krispies instead, and yay for you, this time of year they have their “Spring Colors” edition out that has blue and green krispies, making it the perfect cereal for this holiday.
